SNEADS FERRY SHRIMP FESTIVAL

Inaugural Pig Cook-Off

August 11th and 12th, 2017

OFFICIAL RULES AND REGULATIONS

 

  1. The Chief Cook will be responsible for the conduct of his/her team guest(s). NO ANIMALS WILL BE ALLOWED IN THE COOKING SITES AT ANY TIME.

 

  1. No Public display or consumption of any alcoholic beverages will be allowed on the grounds duing the Pig Cook-Off.

 

  1. A copy of these rules and score sheet will be emailed to each Chief Cook prior to the contest.

 

  1. All cooking spaces will be numbered and each space will measure 20′ x 20′.

 

  1. Contestants are expected to respect the rights of other contestants with special emphasis on loud music,loud or profane language or infringement of adjoining site with equipment and cookers.

 

  1. Contestants may not sell any food, drinks or any items to the public.

 

  1. Roads must be kept clear of any obstruction so emergency vehicles; meat truck or any other maintenace vehicle can pass through.

 

  1. Pigs will be cooked in an “above ground cooker”. All cookers will be approved and no wooden box cookers will be allowed.

 

  1. Burn barrels will be located in your designated area to avoid damage to adjoining tents. Drip pans for grease will be used on all cookers.
  2. All grease is to be emptied into the 55 gallon drum provided.
  3. No charcoal or wood embers are to be emptied on the grounds.

 

  1. Open fires will be allowed only for the purpose of making coals for cooking your pig. Please keep fires as low as possible. All fire barrels must have a safety area so as to keep the unwary from stumbling into them.

 

  1. Each gas cooker will be required to meet safety standards.
  2. Representatives of the Sneads Ferry Shrimp Festival will inspect all gas cookers for the following items:
  3. Gas leaks (from tanks and burners).
  4. Solid connections (all hoses must be LP gas hoses. Quick connects will be considered solid connections.
  5. Tanks will be secured in or to something to prevent it from being turned over. (i.e., to a post or milk crate).
  6. Fire extinguishers will be required on all cookers for safety reasons.
  7. All cooking tents will be required to meet safety standards.

 

           BEFORE A COOK CAN RECEIVE HIS/HER PIG, HE/SHE MUST PASS THIS INSPECTION.

 

  1. THIS RULE IS MANDATORY AND SHALL BE HEEDED BY ALL GAS COOKERS.
  2. If your burner goes out immediately shut off gas.
  3. Open all doors and lids on your cooker.
  4. Wait no less than two(2) minutes before attempting to relight your burner.

                         Leave lid(s) open while relighting.

 

  1. Each Chief Cook is to have the following utensils on hand for judging:
  2. Four sharp knives.
  3. Four cups or bottles of water.
  4. Towels (paper or cloth).
  5. Four sauce bowls.
  6. Hand washing station

                                (Can consist of a 2.5 gallon pitcher of water with a spout and a bucket to contain the contaminated water).

 

  1. A site number will be drawn at the Chief Cooks meeting to determine where the judging will begin.
  2. All pigs will be delivered after the Chief Cooks meeting. The truck delivering the pigs will enter at one end of the field (to be determined by the Sneads Ferry Shrimp Festival Representative) and go out the other end due to safety concerns. Cooks may begin cooking at any time).
  3. Judging will begin at 8:00 am at the site chosen on Saturday.

 

  1. Cookers order of judging:
  2. The first site is available for judging at 8:00 am on Saturday.
  3. There will be NO passes. Cooks will be given enough time to complete their pig. If the cook is not ready for judging he/she will be disqualified.

                       

  1. No trophies or awards will be on display between 8:00 am and the completion of all judging.

 

  1. A representative of the Sneads Ferry Shrimp Festival will:
  2. Accompany judges while pigs are being judged and take up score sheets.
  3. Know exclusively the person who will present the pig for judging on each site.
  4. To see that only one person representing the Cook/Sponsor is present at the cooker while his/her pig is being judged.

 

  1. If and when the Chief Cook decided to withdraw or disqualifies his/her pig from competition, he/she will notify the Sneads Ferry Shrimp Festival representative as soon as possible.

 

  1. No pigs will be removed from the Pig Cooking site under any circumstances.

 

  1. Any pig will be disqualified if any part of the pig is removed or intentionally disturbed other than cutting that which is allowed for the purpose of preparation.
  2. Pigs should not be sauced inside or outside. Sauced pigs WILL BE DISQUALIFIED.

            B.NO EXTERNAL HEAT SOURCE MAY BE USED OTHER THAN THE GRILL. SOME EXAMPLES ARE BUT NOT LIMITED TO: (heat guns,torches), THOSE USING EXTERNAL HEAT SOURCES WILL BE DISQUALIFIED.

  1. INJECTING PIGS WILL NOT BE ALLOWED. EXAMPLES INCLUDE BUT ARE NOT LIMITED TO. (Sauce,Oils, and product drippings). THOSE INJECTING WILL BE DISQUALIFIED.

 

  1. Any pigs judged “not done” will be disqualified. Cooks are required to continue cooking the pig until, in the opinion of the Sneads Ferry Shrimp Festival representative, the pig is done.

 

  1. Each judge will be given score sheets with no information, which would in any manner identify the Cook/Sponsor. The committee, not the judges, will total and grand total the score sheets.

 

  1. All pigs must be turned in whole to the Sneads Ferry Shrimp Festival representative. The Sneads Ferry Shrimp Festival pick up committee will remove the ribs for the Cook/Sponsor.

 

  1. A completed score sheet with your average score in each category will be avalible for each entry after the awards ceremony has been completed. Score sheets will not be mailed out.

 

  1. In the event of a tie, tied positions will be determined by meat and sauce taste score, if still a tie, it will be determined by the skin crispness score.

 

  1. Contest winners will be announced throughout the festival weekend.

 

  1. No sponsor signs will be removed from the pig cooking site.

 

27.THE SNEADS FERRY SHRIMP FESTIVAL COMMITTEE RESERVES THE RIGHT TO MAKE ADDITIONAL RULES AND REGULATIONS AS THE SITUATION WARRANTS.

 

  1. Violations of the rules and regulations of the contest may result in disqualification.

 

  1. The Sneads Ferry Shrimp Festival Committee reserves the right to accept or reject any participant.

 

  1. The Sneads Ferry Shrimp Festival Committee shall not be responsible or liable for the property of any team. All property of the teams shall be under the care, custody and control of the team, whether in transit to or from or within the cook-off site.

 

  1. Decisions of the Sneads Ferry Shrimp Festival and Judges are final.

 

  1. PLEASE NOTE: NO PETS.

 

                                                            PRIZES TO BE AWARDED:

 

                        1st Place: Trophy and Cash Prize. Also entry fee to State Cook-Off Competition.

                       

                        2nd Place: Trophy and Cash Prize.

 

                        3rd Place: Trophy and Cash Prize.

 

                        Trophies for Showmanship (Overall Booth Appearance) and Best Sauce awarded.
